I cooked up the sausages that I made on my ‘Making Sausages’ post last week, a photo is below.
They look rubbish don’t they lol. They were in fact generally agreed to be delicious and I feel inspired to make more and to expand my repertoire.
I am visiting friends this weekend for a barbecue and I will make more as my contribution to the occasion. My friends are farmers who raise lambs as well as growing arable crops so there will be some excellent lamb from the farm and I think a conversation about making Merguez a spicy lamb sausage of North African origin. North African culture and cuisine is very popular in France, very similar to the UK attitude to Indian food and culture, essentially for the same imperialist reasons. I might do a post if I think it’s of interest, but I think I will definitely make some Mergeuz in the foreseeable future.

Hi Ken – I’m not really one for chicken sausage, partly because I am not used to them. I will check out the market stall, living where I am, equally between Loches and St Aignan I tend to look to Loches, Kids schools and being (only just) in 37 means the publicty focuses the other way as well. I am planning to Keep Chicken’s and Guinea Fowl for meat next year. English Bacon, one of the few things I miss from England The French for all their Charcuterie Skills generaly don’t do good bacon, I’ll check him out, the traditional butchers at Halles et Champs in Loches does an excellent home cured and smoked Poitrine that slices up as an excellent bacon as well. – Pip pip Colin
I think the sausages look delicious. What about making poultry sausages? Have you been to the poultry vendor at the Sunday morning market in Noyers-sur-Cher? Or the charcuterie in Noyers or the one in Meusnes? The one in Noyers (Charcuterie Hentry) has a stand at the Saturday market in Saint-Aignan. Evidently, he sells an English-style bacon that some of our English friends think is outstanding. Being Americans, we’re not sure what that kind of bacon is like though.
Well they look like cooked Sausages to me – nothing to be ashamed of at all. And as ever you eat with more confidence when you know exactly what has gone into them.
